By popular request, I thought I’d provide links to some of my favorite recipes (along with my notes).
One caveat: My oven runs a little hot, so my baking time always ends up a little shorter than the baking time in the recipe. I tend to set my timer for 10-15% earlier than the amount of time called for in the recipe.

1. Epicurious Pumpkin Spice Layer Cake: Delicious and crazy-moist. But I halve the butter
in the frosting recipe. Two sticks to two packages of cream cheese isn’t tasty to me.
2. Mark Bittman No-Knead Bread: Yes. You can make homemade bread. Just start WAY in advance of when you need it. No kneading, but lots of rising. And definitely use a warm room. An air-conditioned kitchen probably ain’t gonna do the job. 🙂

4. Soup Belly Cream Puffs: I use pastry cream for the filling, which was quite delish. I had trouble using the “two spoons” method to get the pastries on the sheet; next time I’ll use my version of a pastry bag (Ziploc bag with a hole cut in the corner.) These puff up quite a bit, so err on the small side.
5. Smitten Kitchen Mom’s Apple Cake: Dee. Lish. Us. But note the apples hold their heat for a while, so be patient before attempting to remove from the pan. And the sugar-and-cinnamon-coated apples? Perfect on their own.
6. Smitten Kitchen Oatmeal Chocolate Chip Cookies: My go-to cookie recipe. Feel free to skip the orange zest. These (and the recipe below) also freeze beautifully. Just scoop onto a cookie sheet, freeze, then store in a freezer bag.
7. Smitten Kitchen Thick Oatmeal Raisin Cookies: My go-to oatmeal/raisin recipe.
8. Brown Eyed Baker Better-Than-Brownies Chocolate Cookies: VERY rich. Quite delicious. Did I mention rich? (Image below.)
By the way, I’m looking for a good (moist!) muffin recipe that stores well. Anyone have a recipe you’ve had consistently good experiences with? A “morning glory” muffin recipe (carrots, raisins) would be fabulous. (I’ve tried internet versions, but haven’t had much luck.)
