As you may have heard, I’ve been raving about Diane Morgan’s recipe for Spiced Pumpkin Layer Cake with Cream Cheese Frosting. Its on Epicurious, and it’s from Diane’s new book, The New Thanksgiving Table. It is absolutely fabulous–even though I left out the currants and coconut, and didn’t sift a single thing. But note to the wise–exercise your patience and wait until the cream cheese is fully at room temperature before making the icing. Otherwise, you might, theoretically, get a lumpy icing. Not that that happened to me… 🙂
