TGI . . . T?

It’s a short (day job) work-week for a lot of us in the States. We celebrate Independence Day on Saturday, so many offices are closed tomorrow (Friday) for the holiday. To celebrate that looming mini-vacation, I made one of my favorite desserts (by Southern food maven Paula Deen.) Her Gooey Butter Cake is incredibly easy to make, and absolutely fabulous. (And why wouldn’t it be, with two sticks of butter in the recipe?)

Yes, you read that correctly.

Two sticks of butter in a single, one-layer cake.

But that’s what exercise is for, right?? Enjoy!

Paula Deen’s Gooey Butter Cake

Cake:
1 18
1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted

Preheat oven to 350 degrees F. Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan. Prepare Filling

Filling:
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar [NOTE – I only use about 1/2 to 2/3 a box]

In a large bowl, beat the cream cheese until smooth. Add the eggs, vanilla, and butter and beat together. Next, add the powdered sugar and mix well. Spread over cake batter and bake for 40 to 50 minutes. Make sure not to over bake as the center should be a little gooey.

FYI, Paula’s instructions say this yields “6 to 8” servings. But I bake it in a 9 x 13 pan and let folks cut their own bars, and it makes plenty more than that.

  • Never tried this person's recipe. Just the generic kind we make at our Bakery at the grocery store and that is pretty good. We even have gooey butter cookies! Which are uber soft and to die for!! 😉
